The real key to making these meatloaf and potato cupcakes is making the mashed potatoes exceptionally creamy and colorful. Whether you're making the mashed potatoes from a box or from real potatoes, you’ll want to add just a bit more milk than normal to make them a little creamier.
Once you get the consistency you want, divide the potatoes into a couple different containers. Pick a food color and dye them with a few drops of color at a time until you get the shade you want. Making a couple different colors is fun because your kids will most likely want to have one of each color, which means they’re getting a nice hearty meal.
Use foil cupcake liners and fill about three fourths of the way full with meatloaf and then bake for about 15 minutes. Top with frosting/mashed potatoes and serve.
