Meatloaf and Mashed Potato Cupcake Joke

Imagine your family’s surprise when they sit down to dinner on April Fools' Day only to find a few cupcakes on their plate. But the joke is on them, of course, as you’ve created a meatloaf and mashed potato dinner that just looks like a cupcake.

You can find the recipe for these cupcakes at Spoonful, but if you have a favorite family recipe for meatloaf, feel free to use that one. The real key to making  these meatloaf and potato cupcakes is making the mashed potatoes exceptionally creamy and colorful. Whether you're making the mashed potatoes from a box or from real potatoes, you’ll want to add just a bit more milk than normal to make them a little creamier.

Once you get the consistency you want, divide the potatoes into a couple different containers. Pick a food color and dye them with a few drops of color at a time until you get the shade you want. Making a couple different colors is fun because your kids will most likely want to have one of each color, which means they’re getting a nice hearty meal.

Use foil cupcake liners and fill about three fourths of the way full with meatloaf and then bake for about 15 minutes. Top with frosting/mashed potatoes and serve.
